Over ten days you will stand in a vineyard outside Meknes as the first pour of the season is poured, wander the medieval medina of Fez, spend an unhurried day on a private stretch of Atlantic coastline, and share a family’s own cooking in a Fez home. Food carries the story, but so does history and coastline: imperial cities, a fortress town on the old road north, a desert dinner under the stars outside Marrakech. DAY 1 - Welcome to Morocco

Casablanca to the capital

Arrival into Casablanca, followed by a private transfer to Rabat, Morocco’s stately capital on the Atlantic since 1912, and, long before that, a Roman-era river settlement and later a stronghold of Barbary corsairs. Settle in for the evening and gather for a Welcome Dinner, the first taste of the flavors and traditions that will carry through the days ahead.

DAY 2 - Vineyards, a Medina, and the Road to Fez

Meknes en route

The road east toward Fez pauses at a vineyard near Meknes for a leisurely lunch, an introduction to the terroir and pressing traditions behind so much of Moroccan cooking. From there, a stop in the medina of Meknes, one of Morocco’s four imperial cities and, under the 17th-century Sultan Moulay Ismail, briefly the seat of an empire rivaling Versailles in ambition, its monumental gates and royal granaries still standing today. Arrive in Fez by evening and settle into the historic medina.

DAY 3 - The Soul of Moroccan Cuisine

Souks, spices, and a family table

A historical visit of the medina of Fez, the world’s largest car-free urban space and a UNESCO World Heritage site, its labyrinth of lanes unchanged since the Middle Ages. A food tasting tour winds through the souks, spice by spice, tracing how centuries of trade built the foundations of Moroccan cooking. The day closes with dinner inside a local family’s home, a rare and unhurried window into how the country really eats.

DAY 4 - To the Atlantic, by Way of the North

Ouazzane and Ksar el-Kebir

West toward the Atlantic coast, the road passes through Ouazzane, a hillside town of white houses and religious significance tucked into the foothills of the Rif, and Ksar el-Kebir, a market town with roots stretching back to the Almohad era and a name, the “Great Fortress,” that recalls its long history as a crossing point between the coast and the interior. Arrive in Larache by evening, a quieter corner of Morocco where Andalusian and Atlantic influences meet.

DAY 5 - A Day by the Sea

Village breakfast, private beach, and a picnic at sunset

Breakfast in an authentic fishing village nearby opens an unhurried day, a glimpse of a coastline shaped for centuries by Amazigh fishermen and, later, by Andalusian and Spanish settlers who left their mark on this stretch of the Atlantic. The rest of the morning and afternoon are left free on a private beach, with a picnic dinner served beachside as the day winds down. For those who’d like to fill the hours, a horse ride along the sand, a hammam and massage, or a short coastal hike are all available.

DAY 6 - Back Toward Casablanca, by Way of the Capital

A historical visit of Rabat and lunch at Rick's Cafe

The road turns south toward Casablanca, pausing in Rabat for a historical visit of the capital: the Kasbah of the Oudayas, an 12th-century Almohad fortress overlooking the mouth of the Bou Regreg River, the unfinished Hassan Tower, begun in 1195 as the minaret of what was meant to be the world’s largest mosque, and the Mausoleum of Mohammed V, resting place of the modern kingdom’s founding monarch. Continue to Casablanca for dinner at the storied Rick’s Cafe, the restaurant inspired by the Hollywood classic.

DAY 7 - Hassan II Mosque, Then South to Marrakech

A food tasting tour by evening

A visit to the Hassan II Mosque opens the day, completed in 1993 on land reclaimed from the Atlantic and home to the tallest minaret in the world at over 200 meters, its interior a showcase of Moroccan craftsmanship built by thousands of artisans over five years. From there, a private transfer south to Marrakech. After checking in, the evening unfolds with a food tasting tour through the city, a first, flavorful introduction to the Red City after dark.

DAY 8 - Marrakech, Then Dinner in the Agafay Desert

A guided day and a live show under the stars

A guided exploration of Marrakech fills the day, the medina, its palaces, and its souks, layered with nearly a thousand years of history since the Almoravid dynasty first raised its red ochre walls. As evening falls, head out to the Agafay Desert, a rocky, moonlike landscape just outside the city, for dinner beneath the stars with a live music show.

DAY 9 -Farm, Bread & the Hammam

A private cooking class with a local chef

A morning outside Marrakech at a local farm, where a private cooking class with a local chef and a traditional bread-baking demonstration turn fresh, farm-picked ingredients into lunch, a true farm-to-table experience in the shadow of the Atlas Mountains. Return to Marrakech for a hammam and massage ritual, steam and stillness to close out the day.

Marrakech, journey's end

A transfer to Marrakech Airport closes out ten days that carried you from imperial cities to the Atlantic coast, through kitchens, markets, and family tables, a full portrait of Morocco tasted one dish at a time.
